Lentil kuefte

This is very a tasty, easy to prepare and healthy meal for any occasion. You can serve it as an appetizer or even a full meal. I tried it for the first time around a week ago in a restaurant and immediately dec >


  • 1 cup red lentils
  • 2 cups of water
  • 1/2 cup koftelik bulgur
  • 1/2-1 tsp salt
  • olive oil
  • 1 onion
  • 1 tsp cumin
  • 1 tbsp tomato
  • 1 tbsp pepper paste
  • juice of half or one lemon
  • 1/3 bunch parsley
  • 1 stalk green onion
  • lettuce leaves to serve


Wash the lentils well and then add the water and cook for around 15-20 minutes or until you can smash a lentil between your fingers. Turn off the heat and add bulgur and salt. Mix and cover and wait for another 20 minutes for bulgur to soak the remaining water.

Add some oil to a pan and pre-heat it. Add your chopped onion and fry until soft. Add cumin, pepper and tomato paste and fry it off another minute or two. Transfer the cooked onion mixture to your lentil pot. Add lemon juice, chopped green onion and chopped parsley. Make sure to chop parsley finely. Mix well. Best to use your hands while mixing to make sure the lentils are thoroughly squeezed and mashed. You don’t want to crush them to complete pulp but there shouldn’t be many separate pieces left.

Finally form your mixture into koftes. Take a handful of the lentil mixture and squeeze it, not all the way through. That way you get the cigar-like shape with finger marks. Serve of your choice of lettuce, I used mini romaine lettuce as I think it’s the perfect size for these koftes. To make a hot version of this meal simply add a teaspoon of hot pepper flakes at the end of frying the onion mixture.
