Shiitake sauce

Mmmmmmm….mushrooms! This recipe is all about yummy yummy mushrooms and I figured best here will be shiitake mushrooms. It may sound like a strange choice to compose these with pasta and blue cheese but the taste is mind-blowing and the mushroom flavour is really intense. Without further ado here’s my ultimate mushroom pasta sauce.


  • 2 onions
  • 2 cloves of garlic
  • soya sauce
  • 200 gr shiitake mushrooms
  • teriyaki sauce
  • marjoram
  • black pepper
  • 50 gr blue cheese


Give your mushrooms a good wash, dry and slice them up. Chop the onions finely and grate the garlic cloves. Put some olive oil in your pan and add onions along with mushrooms and garlic. Add a splash or teriyaki and soya sauce. Season with black pepper and marjoram. Pour in around 50 ml of water and cook on medium heat for around 15-20 minutes until the sauce reduces and becomes thick and luscious. If the water evaporates too fast you can always add more. Finally add the blue cheese and allow it to melt. Give it all a good mix and your mushroom sauce is ready. I serve it usually with spaghetti, so I put half of my sauce into the cooked spaghetti pot and mix all well so that spaghetti is thoroughly covered in my sauce. Then I plate it up and drizzle with the remaining sauce. You don’t need to add salt here since there’s already soya sauce plus blue cheese but while the blue cheese melts you can taste if any spices are needed, like more black pepper etc.
